While I've still been baking (quite a bit, actually) and definitely eating (my clothes are crying when I squeeze into them), I've been completely unmotivated to blog these past few months. I would start a post, then get side tracked and forget about it. Or I would sit there trying to come up with something witty and fun to say, only to type out short snippets that I didn't think were worth posting.

I'm moved by how quickly the community has come together, planned events in his honor and even started a scholarship in Ryan's name! In the midst of all this, of everyone's kind words, of photos being posted, I kept seeing this one pair of shorts. I know he has a bunch of incredibly bright, vivid Jams, but for whatever reason, these were stuck in my head. This week has been ridiculous for me. I've been working crazy hours, studying for finals, writing a paper, and trying to keep up with my work out schedule. Of course, being the procrastinator that I am, I decided that this week would be a great time to get some baking in. Hahaha.

This was the very beginning of my food and recipe blogging attempts, posted almost a year ago, and definitely before Nubcakes was born! In any case, I made a batch for another coworker's house warming... Then someone at the party requested I make them for the upcoming bake sale. And for another baby shower next week. And finally... For someone's wedding. Cross your fingers for me! I'm a bit nervous for that last one. ><
Read More Post a comment (10)After the previous post about what red velvet REALLY is (no folks, not just choco cake with tons of red food coloring), I decided that maybe a taste test should go down. Of course, that was months ago, and the thought slipped my mind as the holidays came, left, and I let school do the whole time-consumption thing. Then, fate intervened. The "Eat the Streets" food truck rally happened, and my coworkers left me in the Gogi Korean Tacos line while they skipped over to the Let them Eat Cupcakes tent. Honestly? I didn't care. Not a huge cupcake fan, and currently participating in our office's version of "The Biggest Loser" I figure I could spare myself the calories. All this changed when they came into the office the next day raving about these darn cupcakes. Saying they were the BEST they've ever had, etc, etc, etc. Darn them and their sugar coated super powers.

It's funny when you think about it, but I've never stopped to ask what Red Velvet cake is. I always just ran with the assumption that it was chocolate cake with tons of red food coloring in it.

Along with EIGHT buffets (which I'll blog about later) we looked through Yelp for some local eats. When Ry stumbled across Luv It Frozen Custard, we decided it was something we needed to try.
