I love Mexican food.

The gooey cheese. Tomatoes. Refried (none of that healthy black bean business!) beans, sour cream, guacamole….

Did I mention the oozing, melty cheese??

**stomach growls**

Can someone make me a breakfast burrito? Hehehe.

So the coworkers have been chattering madly about Mexican week for a while now.  This theme was actually one of the pioneering ideas for our Themed out Thursdays, but for whatever reason, we ended up pushing it back.

What was I thinking?

Guess I had to pay homage to my motherland first! Hahaha.

Ok, enough jibber jabber, let’s cut to the chase.┬áThe spread:

Flour Tortillas. You know, I’ve never ever seen this brand before. No idea where my coworker shops, but it’s not Safeway.

El Toro! (Flour tortillas)

Vegetarian refried beans. Cooked up with cumin and some chili powder, for a subtle kick.

Yes, I said vegetarian.
Yes. This sparked a debate among us about whether or not a non-vegetarian version exists.

And yes, I was right in my thinking that the fact that they labeled the can “vegetarian” means there’s a meat-a-tarian version around. (Thank you google!)

For those that are curious: the non-veggie version is cooked in lard and mixed with beef broth. No bacon grease, though. Hahaha.

They’re vegetables, after all, and as much as I love them…they’re not so glorious when given the lime light.

Vegetarian or not, I don’t feel bad! Hahaha.

Moving on to more lime light worthy subjects:

I know. We should’ve grated up some fresh cheddar and jack, but alas, I was not in charge of the cheese.

My only requirement was that it gets melty, and these do just fine. :D

  2. Oh Mexican, that’s a good one! I love homemade bean burritos with all the lettuce and tomatoes and sour cream. Mmm…sour cream! Look delicious!!
