I love Mexican food.
The gooey cheese. Tomatoes. Refried (none of that healthy black bean business!) beans, sour cream, guacamole….
Did I mention the oozing, melty cheese??
Can someone make me a breakfast burrito? Hehehe.
So the coworkers have been chattering madly about Mexican week for a while now. This theme was actually one of the pioneering ideas for our Themed out Thursdays, but for whatever reason, we ended up pushing it back.
What was I thinking?
Guess I had to pay homage to my motherland first! Hahaha.
Ok, enough jibber jabber, let’s cut to the chase. The spread:
Flour Tortillas. You know, I’ve never ever seen this brand before. No idea where my coworker shops, but it’s not Safeway.
Vegetarian refried beans. Cooked up with cumin and some chili powder, for a subtle kick.
Yes, I said vegetarian.
Yes. This sparked a debate among us about whether or not a non-vegetarian version exists.
And yes, I was right in my thinking that the fact that they labeled the can “vegetarian” means there’s a meat-a-tarian version around. (Thank you google!)
For those that are curious: the non-veggie version is cooked in lard and mixed with beef broth. No bacon grease, though. Hahaha.

They’re vegetables, after all, and as much as I love them…they’re not so glorious when given the lime light.
Vegetarian or not, I don’t feel bad! Hahaha.
Moving on to more lime light worthy subjects:

I know. We should’ve grated up some fresh cheddar and jack, but alas, I was not in charge of the cheese.
My only requirement was that it gets melty, and these do just fine.
You know, the hardest part about burritos…
Would have to be getting them to close

So, it's December. Better late than never?! Hehe. Three months later, I'm finally putting out the Hits and Misses post that I was so excited to start doing! Hahaha. This being the first run, let me know what you guys think! If I'm writing too much, or too little, etc. more
More often than not, the lazy bug rules the weekend mornings. "5 more minutes" becomes 2 more hours, and when I blink it's after 2pm. I crawl out of bed only to see that pesky to-do list, wagging it's finger at me. But this weekend was different! It was still morning and we were out the door, lappies packed, and heading toward downtown to find a place to get some work done. We decided on Manifest, and got to work, coffee in hand. At around 12pm, my stomach started complaining... Ten minutes later, I started complaining! hehe. I started looking around for a place that a was open, which, on the weekend, isn't much once you venture past Smith street.
