Swedish Sandwich Cake

That was pretty much the face I made when I walked into the conference room today.

There, on the table, were two massive cake like sandwiches…

or sandwich like cakes…

or “Smörgåstårta” for those of Swedish decent.

My coworker’s parents were in town from Sweden, and even though they were on vacation, they spent TWO of their precious vacation days laboring over these cakes.

The first one, has what I imagine to be every type of sliced deli meat available on island. As well as tomatoes, greens, pineapple, and…yes folks, that IS brie. Big, delicious chunks of brie.

But that’s just the top. Cutting into it reveals layer upon layer of a mayo/ham/pineapple mix. With tiny chopped cucumbers throw in as well.

And that’s when she told us that her mom actually brought the bread from SWEDEN to make this cake for us.

I couldn’t take it anymore.

I dug in.
I’m sorry to the rest of the vegetarian world out there, but I couldn’t help it!!

The second cake was seafood based. The top dressed with smoked salmon, shrimp, lemon, greens, cucumbers, and tomatoes.

The “frosting” for both cakes was a  mayo/cream cheese type topping. (not fully sure, coworker is going to get me the recipe later hehe)

I sort of wish you were in the office with us. I mean,  you could hear the ooooh-ing and aahhhh-ing and overall enthusiasm of us foodies from across the office!

Especially when we cut into this cake and revealed MORE SHRIMP! They layered an egg salad with shrimp and tuna salad.

Totally amazing.

They even went out and picked up a pea salad to go with it.

Today, if I learned anything, it’s that the Aloha Spirit can be found EVERYWHERE. Even as far away as Sweden, where these three hail from:

    I stumbled on this while looking for how to make a similar type cake that was made fir me at a baby shower 30 years ago. It is obvious to me that what I had 30 years ago was a bare bones version of this incredible Swedish Sandwich Cake.

    I can hardly wait to make it!!! I obviously loved the one 30 years ago, and this is going to be SO MUCH BETTER!!

    Off to look for the recipe now, hopefully you posted it, otherwise I will scour the net.
