When it comes to my schedule, I'm close to neurotic. I have various google calendars, color coded and sometimes, I feel like I'm planning out every second of my life. What can I say, busy is better than bored, right? Hahaha. In any case, I am the exact OPPOSITE when it comes to cooking and baking. I usually will decide what to make that day, depending on what I have on hand. I don't really make a shopping list unless I'm planning to make something epic, with those non day-to-day ingredients. This is where "fridge velcro" comes in.

When normal people hear dill, they think about it with potatoes. Me? I think about cucumbers. It just so happens that dill pickles were my all time favorite snack when I was a kid. Strange kid, right? I guess the strange runs deep in our family, because both my older sister and my little sister love dill pickles too! We seriously go through those huge costco sized jars of pickles in a month or so. Probably not the best for our blood pressure, but better than ho-ho's and cupcakes, right? Anyway. Back to the herbs.

Shopping at costco on an empty stomach usually ends up with ridiculous purchases. You know, like 3 pounds of cream cheese. Which would be fine if they were individually wrapped, but no such luck. This was more or less a three pound block of cream cheese, that apparently needed to be used within 10 days of opening. I was intimidated. So much so, that I let the block sit in the fridge for three weeks while I surfed the net and spoke with coworkers about what I could possibly do with so much of it. I finally opened up the package and used 8 oz of it to make a corn casserole dish that actually came out really great! Super easy to make, but not exactly the most exciting of meals. I forgot to take a picture, so I'll blog it the next time. :) On to the good stuff! I found this recipe on Lovin' From the Oven, and she got the recipe from the Essential Chocolate Chip Cookbook. Like most blogs, it was the photo of the dessert that caught me and pulled me in.

Themed out Thursdays: Sushi!

Sushi. The word in itself scares some people away. They imagine things like super slimy raw fish, salty fish eggs, octopus, or the sometimes deadly fugu. But here, in Hawaii, sushi can take on an entirely different meaning. For this theme lunch, we decided to bring whatever food we thought would go great with rice, and wrap it all up in korean-style nori (seaweed). After the other week's sandwich theme lunch, we reminded each other that we're doing this to save money. (ie: don't buy epic amounts of pastrami from Sam's Club) Overall, I think we have been. We usually have enough lefties for lunch on Friday, and no one's been left feeling hungry!

Turning my thumb green

I've always been interested in gardening, but I've never really mustered up the guts to get out there and buy a plant. I guess I've always been a little nervous that my thumb will be more brown than green, and I'll destroy whatever poor plant I attempt to grow. Then one day, just about a month ago, as I was walking around the open market on Fort Street, I decided to just go for it. After a slew of questions (How much sun does it need? Will a balcony work? How often do I water it? Is it possible to over-water? How do I harvest them?) I bought a Basil and Italian Parsley plant. Amazingly, I not only kept them both alive, they were GROWING!

The best way to eat an apple

An apple a day, keeps the doctor away...and this recipe used two apples. So technically, eating half a batch of these bad boys is totally legit. Right? Hahahaha. Chopped, enveloped in a fluffy cinnamon-y batter, deep fried and then glazed. These small bites of heaven are the perfect addition to a lazy Sunday, some late night productivity, and they even serve as an afternoon snack to fight post-lunch sleepyness!

Themed out Thursdays presents: Sammy Day!

Although our office is made up of about 80 or so people, when lunch time rolls around, there's usually only the same 8 or 9 of us in the lunch room at the same time. Some call us "clique-ish", but personally, I like to call us the "cool kids" hahaa. Anyway. Our little group decided it'd be fun and exciting to do themed weekly lunches. With plate lunches in downtown being in the $6-$10 range, the bring a little, get a lot, potluck idea sold in just under 2.5 seconds! :D We've actually been talking about it since the beginning of summer, but only got around to planning it out when my coworker thought up the brilliant idea of using google docs (vs. a million emails back and forth). Why didn't I think of that? So we set it up and enjoyed our inaugural "Themed out Thursday" last week. Sammy day! (Sandwich, for those of you who don't speak 3rd grader, heh)

More often than not, the lazy bug rules the weekend mornings. "5 more minutes" becomes 2 more hours, and when I blink it's after 2pm. I crawl out of bed only to see that pesky to-do list, wagging it's finger at me. But this weekend was different! It was still morning and we were out the door, lappies packed, and heading toward downtown to find a place to get some work done. We decided on Manifest, and got to work, coffee in hand. At around 12pm, my stomach started complaining... Ten minutes later, I started complaining! hehe. I started looking around for a place that a was open, which, on the weekend, isn't much once you venture past Smith street. That's when I noticed the open sign at Maria Bonitas, a Mexican joint on Hotel street.

A few months back, there was a massive bake sale in downtown. Massive as in, order sheets at an easy-up in Tamarind Park (Bishop Square), with signs and people navigating you toward tables upon TABLES of brownies, cookies, snack mixes, and chocolate dipped diet-destroyers, set up in a vacant store! :D *poof* (the sound of my coffee fund transfiguring into chocolate covered oreos and chex mix). I started talking to a couple of the volunteers, asking them what it was for and who was in charge. Basically, a 10 year old wanted to do something for children that had cancer, and she heard about the organization "Cookies for kids' cancer" and decided to throw a bake sale! I was floored, and so inspired, that I did a second round at the tables! ahaha.
